Apple Duck

Ingredients

  • 1 duck
  • 4-5 green apples
  • 1 onion
  • 2 tablespoonfuls of flour
  • Salt, pepper

Ok, it’s a real time-killer. The recipe itself is simple, but you have to follow every step exactly as described.

First of all, you need to make juice out of the apples, and it needs to be really, really sour. The acid in the apples is needed to make the duck meat tender and fragrant.

Now cut the duck into pieces, not too big, not to small… for a couple of bites each. Make a mixture of salt, black ground pepper, very finely chopped onion, and rub it into each piece. Put the duck into a glass or enameled dish and pour the sour apple juice over. It has to stay like this for at least an hour. Then put the dish as is on the stove and stew slowly. When the duck becomes soft, carefully take the pieces out with a fork, put them on a paper towel to dry a bit, and after that rub some fat (either lard, or olive oil) into each piece and put them in a stove to bake for some 20 minutes.

Time for the sauce! The juice, where the duck was cooking, needs a couple of spoons of flour, but mix well, so that there are no lumps. If it’s too thick, which is normally the case, you need to add some hot water or broth, then add salt and cook on a slow fire. This sauce must be poured on the duck and served to your beloved foodies.
