Mannik (semolina cake)

Ingredients

  • 1 cup semolina
  • 1 cup kefir
  • 1 egg 1 cup of sugar
  • 0.25lb shortening
  • 1 cup of all-purpose flour
  • 0.5 teaspoonfull baking soda

Cooking

Mix semolina, sugar, egg and kefir in a big bowl and leave for at least 3 hours – or for the whole night, if you plan to bake the cake in the morning. Then add melted shortening (margarine will do) and all the rest of the ingredients. Pour the dough into a well-oiled baking tray and put into a cold oven. Heat the oven to 480F and bake for about 15-20 minutes.

If you want to give the cake extra softness and tenderness, you can cream it with sour-cream beaten with sugar, or any other topping you like.
